Christmas Cookie Carnival: Peanut Butter Cup Cookies

You just can't go wrong with these!  They are easy, look cute, and everyone loves pb and chocolate.  They freeze great, too.

100_7210 This is a great job for the kiddos...unwrapping the mini peanut butter cups.  Just make sure you set a snacking limit lol.

100_7212 Aren't they cute?  Love my mini muffin pan...actually I bought it for dh last year, for his pecan tassies, but I still love it. :P

100_7214 Oh, my, word.  Look at that gooey chocolate covered peanut butter cup just melting...mmmm.  Don't worry, they taste great after they have properly cooled as well.  I also wound up making a batch of these with caramel cups and they tasted great, too.

Peanut Butter Cup Cookies  from Allrecipes

1 3/4 cups flour
1/2 tsp salt
1 tsp baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup brown sugar
1 egg
1 tsp vanilla
2 tbs milk
40 mini chocolate covered peanut butter cups, unwrapped

Preheat oven to 375.  Combine dry ingredients and set aside.  Cream butter, sugars and peanut butter until fluffy.  Beat in egg, vanilla and milk.  Add flour mixture and mix well.  Shape into 40 balls and place in ungreased mini muffin pan.  Bake for 8 minutes.  Remove from oven and immediately press a pbcup into each ball (don't be shy, really press it down so that the tops are even.)  Cool and remove from pan.
