I love Kraft Food & Family magazine...it's free, it has delicious recipes, even coupons sometimes! I don't think there is one issue from which I haven't made up at least one recipe. The latest Fall 2008 issue has several recipes I've earmarked, and one I made tonight for dinner...Meatloaf Minis. These were easy, relatively quick and my boys all loved them. The magazine even has 3 different variations to customize the recipe to your family's taste. Here is the version I went with.
Meatloaf Minis
1 pound extra lean ground beef
1 pkg Stove Top Stuffing Mix (I used cornbread flavor)
1 cup water
3/4 cup shredded cheddar cheese (I used a Mexican mix)
1 tsp Italian seasoning
3/4 cup spaghetti sauce
Preheat oven to 375. Mix the beef, stuffing mix, water and Italian seasoning. Press mixture into 12 muffin cups sprayed with cooking spray. Make an indention in the middle of each meatloaf with a spoon; fill with the spaghetti sauce. Bake for 30 minutes, sprinkle with cheese, and bake 5 minutes more to melt cheese. Yum!
